I understand this as meaning that the signatories release other parties (to the contract) of their legal responsibilities.
They are therefore waiving their own right to sue them.
I haven't found the first two possibilities being used but I think they do away with some possible ambiguity.
Exención de responsabilidad is a phrase that is used but but I think that it would give the impression that it's the signatories who don't want the responsibility.
By the way, in Spanish I would put it in the singular.
