papel de carnicero


Explanation:
Papel de carnicero - found in a list of materials used in a school in Argentina. It is also what I remember we called it in Venezuela.

papel encerado o parafinado


Explanation:
Una de sus caras está (como su nombre indica), encerada (lo tocas y parece de plástico. De hecho, algunos 'papeles de envolver' constan de dos capas: la de papel y otra, muy fina, de plástico (que es la que 'toca' al pescado, la carne, etc que envuelven).
El de estraza, efectivamente, presenta una de sus cara más satinada que otra, pero no está exactamente 'parafinado'. Puede que hace muchos años lo usaran los carniceros para envolver, pero ya no (ahora usan los parafinados). Sí se sigue usando para bolsas y para envolver paquetes (porque es muy resistente). También para cocinar (muy útil en repostería),precisamente, porque tiene una cara ligeramente 'grasa'
