During the creaming stage of cake production (the mixing together of fat and sugar), air is incorporated into the mix. http://www.library.ubc.ca/ereserve/hunu201/fdmanual/page108.... Creaming is a process of working the fat and sugar by hand with a spoon or spatula or with an electric beater to incorporate air bubbles and result in a heavy foam. Espero que te ayude algo. |
