Es casi seguro un error en el original. Debe decir: "GI tract" (con "t" al final).
"Gastrointestinal tract" es más propiamente el "sistema gastrointestinal", pero muchas veces se refiere en general al "aparato digestivo" completo, que abarca no sólo el estómago y los intestinos, sino también boca, esófago, etc.
De cualquier manera, yo te aconsejo evitar "tracto", que algunos usan, porque es un calco del inglés que no añade nada, mucho menos claridad.
