I have a hard time phrasing the first part of the sentence with what follows, I've got a mental block. How is it that the football organizations reflect the fact that clubs are driven by business interests? Any sports fans out there?

duda de que, puesto que son los que manejan la pasta gansa, tienen mucho peso, pero hay mucho enfrentamiento entre federaciones/UEFA/FIFA por un lado y clubes por otro. De todos modos, sí que tu texto refleja lo que interpretas. :O)
Lo que preguntas es bastante discutible. En general, la FIFA o la UEFA representan a las federaciones nacionales que, a su vez, representan tanto al fútbol profesional como al aficionado. Las ligas profesionales presionan mucho a estas instancias y no hay
Entonces, lo que dice es que ya que estos clubes cada vez más se fijan en el dinero, ¿las organizaciones de fútbol reflejan este punto de vista? O sea, ¿que también se han vuelto más peseteras?
Bueno, yo lo interpreté como dos preguntas distintas. Se dice clubes, pero alguien escribió "clubs", creo que por eso se pregunta con respecto al plural.
Luego contesté la segunda (no es lo mismo). Sí, me refería a las varias divisiones.
Lo correcto es clubes por que es el plural de club y se refiere a la institución. Creo que lo cqowar quiere decir con más de un equipo es que cada club tiene un equipo por división (primera, reserva o tercera, cuarta, quinta, sexta, etc.)

De alguna forma sí es lo mismo, pero como en esta oración nos referimos más a una conducta institucional que al equipo o plantel de jugadores, creo mejor dejar clubes.
