Sé que CofC es Chamber of Commerce, ahora bien ¿debería traducirlo por Cámara de Comercio, o por su acrónimo correspondiente? ¿Cuál sería el equivalente en castellano? Tengo esa duda.

Explanation:
Yo lo pondría así la primera vez que aparece y a partir de ahí utilizar el acrónimo.
Este acrónimo no es tan habitual como CC (que, por cierto, se refiere a Código Civill) ,por lo que convendría explicarlo la primera vez.

La primera vez que lo menciones puedes agregar "Cámara de Comercio" entre paréntesis, pero probablemente no sea necesario. Tu propio instinto de lectora te dirá.
