Переклад залежить від контекста. Наприклад, якщо у попередньому тексті йде мова про якісь затримки та пояснюються причини їх виникнення, то це речення - In the meantime, we appreciate your patience. - я би перекладала якось так:
Ми дуже Вам вдячні за терпіння/розуміння.
Тобто meantime=протягом періоду, який потрібен для вирішення проблеми. І тоді "водночас" не підходить.

Ми дуже Вам вдячні за розуміння ситуації, що склалася.
