French to Dutch translations [PRO]
Agriculture / vleesverwerking | | French term or phrase: ressuage | Een term die voorkomt in een tekst over verwerking van vlees in bijv. slachthuizen. Weinig context.
Bijv. La couleur de la carcasse est également mesurée, par exemple avant le poste de ressuage.
Van Dale geeft: "zweten, uitzuivering"; op Eurodicautom vind ik - specifiek met betrekking tot vleesverwerking - "verkoudheid, kouvatting", maar daar kan ik geen enkele referentie of bevestiging van vinden.
Is er iemand die me met een aannemelijke zekerheid kan zeggen wat de officiële term?
De "Grand Dictionnaire Terminologique" geeft nog de volgende definitie:
"Temps pendant lequel une carcasse fraîchement tuée est laissée à l'air libre à la température ordinaire pour se débarrasser de son humidité de surface.
Séchage d'une carcasse fraîchement abattue."

N.B. Ik heb nog nooit een koe geschacht, ben vegetariër. Maar ik heb al dergl. teksten uit het frans in het duits vertaalt. In het frans heet "ressuage" ook "dessictaion". In het duits spreek je van "Auskühlverlust" of "Austrocknen".
Op Google vind je "uitdroging" i.v.m. "slachthuis":
