I sort of feel what's meant, but I need help!

Des propositions pour une priorité d’approvisionnement aux maisons qui véhiculent l’image du champagne ont déjà été proposées. « Nous proposons - et les vignerons n’y sont pas opposés - une priorité d’approvisionnement aux dix ou quinze grandes maisons qui véhiculent l’image du champagne. Il faut défendre l’identité de ces maisons de champagne, qui implique un savoir-faire, un **travail signé**, identifiable, qui commence au vin clair. Aujourd’hui, certains raisonnent à l’inverse en logique de marque. Or une marque, c’est avant tout du marketing ; et demain, si les problèmes d’approvisionnement perdurent, rien ne dit que certains n’iront pas s’approvisionner ailleurs pour vendre des vins qui n’auront pas droit à l’appellation champagne, mais qui seront vendus sous le nom de marques prestigieuses de champagne. Cela se fait d’ailleurs déjà aux États-Unis »

quite similar to BD, the style (or even stylistic or distinctive stamp) is known immediately the wine/champagne is tasted or even when bottle opened! This is a common expression (used not just for wine).

Asker: Ah yes, thanks for that interpretation. In fact, here I think simply "craftsmanship" would be sufficient.

This isn't about run-of-the-mill champagne, but rather prestigious producers who, confident of the quality of their produce, want to put their name (and the quality of their champagne) behind the bottle.

Asker: Exactly - we're taking Moet & C, Mumm, Veuve Cliquot etc. In fact the preceding text makes it clear that these firms may be keener on vaunting their own brand than the reputation of Champagne in general via the AOC, so the "name behind the bottle" has already been heavily emphasized in the text.

Reversing the idea of the dominance of brand names to indicate (or to substitute for) quality, a wine that is distinctive through its particular qualities - that would be recognised at once in a blind tasting.
