French term or phrase: contrôle
This term is ALL over this text, which is about testing slaughterhouses for E. coli and Salmonella, and I just want to make sure I'm translating it correctly.

Here are a couple of examples:

Surveillance des points critiques par des procédures de contrôle

Les enregistrements peuvent être mis à jour par informatique si des contrôles appropriés sont effectués pour s’assurer de l’integrité des données informatiques.

Le contrôle d’hygiène s’evalue à partir des 13 derniers resultants obtenus

I think the first 2 examples can be translated by "control services" and "control procedures" but I'm kind of stuck on the last 2. Would "testing" or "evaluation" be better?

You may have to use all and any of the words already mentioned, since "contrôle" can have many meanings in different situations, but note that it will often be "inspection", particularly in a context such as this (think of meat inspectors, poultry inspectors, and the like).

agree  Charlie Bavington: while there is nothing wrong with other suggestions (measures, procedures etc.), why complicate matters? The author has decided to call everything "checks", so just call 'em "checks". Not your job to improve the original if there's no issue with clarity.

Check out the Canadian Food Inspection Agency website, which has loads of information, in French and English, on this very topic. I found one document right away, using Google Advanced Search and entered www.inspection.gc.ca as the search domain, specifically,the site below. Just toggle to English on the menu at the top.

agree  MoiraB: Exactly. I have this all the time translating slaughterhouse texts. First two examples are "inspection", third is "checks" and last one can be conveyed by "testing". "Controle" can also mean monitoring in some contexts.

As Bourth rightly points out, "inspection" is a good solution for the first two examples, although you will often see "sanitation control" or "hygiene control" procedures. Official sanitation/hygiene inspection services.
