This appears in a document on diversification in agriculture.

From what I understand, the term refers to work carried out for other people using raw materials that are not your own.

Any suggestions as to the correct term for this in English?

I have considered something like "work under contract" but I'm not sure if this is specific enough. The precise context is:

"Cette forme de diversification comprend des filières classiques, telles que les travaux à façon, l’élaboration-transformation de produits agricoles, la vente directe, le tourisme à la ferme,..."

It does mean exactly what you say: for example, beekeepers will have some their honey turned into lollipops or honey cakes by a specialised firm that has the necessary equipment, or wine producers will have have some of their wine turned into champagne-style sparkling wine; this again requires specialised equipment and handling. This means that producers can have a more diverse line of products without huge investment. Maybe custom production would do too?

Many thanks for your explanation and suggestions. I think probably the best solution here would be "contract processing": "custom" to me describes the nature of the service (bespoke), whereas "contract" describes the nature of the agreement between the parties, which I think is what is pertinent here? "Processing" seems less ambiguous here than production, which might suggest growing (eg.) a crop under contract.
