pruning saw
Explanation:
I know pruning isn't mentioned, but that's the sort of wood saw that seems to be meant, as pruning saws seems to be in this knife-like shape nowadays, either folding or not so.

Actually, I don't think it's about the handle, but that the blade is designed for sawing smallish branches, as in pruning.

These do have the right sort of handle, but the blades are always fairly thin, because they are for sawing out holes, so it might not be right.

Before transworder zaps me too: this is NOT just about the blade and Emmanuelle found a perfectly good picture on a French website. The reason it seems to be called "à couteau" is that the type of handle is an extension of the blade, like a knife handle, rather than the classic type of saw handle.
