Hello. This notion appears in the syllabus for a chemistry course, as follows:
"L’outil avancement est fourni pour déterminer quantitativement la composition finale du système à partir de sa composition initiale et de l’équation de la réaction chimique associée à la transformation observée."

Here is another example that might help to clarify the notion:
"Le système chimique a été défini par des quantités de matière présentes à l’état initial, à un état intermédiaire et à l’état final, toutes reliées à l’avancement x. La fonction x (t)donne donc directement accès à l’évolution du système. La détermination de x(t)se fait à partir de mesures de grandeurs reliées aux quantités de matière ou aux concentrations. "
