French term or phrase:liste à étage
Elles sont sous forme de liste déroulante, par exemple avec le bouton Police (Font).
Elles peuvent aussi prendre l’apparence de liste à étage comme le bouton Style (style).
Explanation: I have a (US) English version of Word. When you select "styles and formatting", a panel opens on the right side of the window. At the top of this panel there is a drop down list that currently says "styles and formatting" but can be used to select other panels (help, search results, clip art...).
If you put the mouse cursor over this control, the tool tip says "Other task panes".

Since I posted this we have been informed that it is Word 2010 which, I'm fairly sure, uses a different way of displaying styles. Thus my confidence level is even lower now.
Sorry for the confusion, all, you all know how it is when we get bogged down in confusing terminology in long documents written by several individuals, each with his own style... but anyway, working with me and what I gave you, you helped me, and ultimately the client. Sorry, I was deep into translation and have come up for air, now that I'm in reviewing mode. I see I've annoyed some people with my lack of context; mea culpa. That annoys me too. This term does refer to Galleries, to answer cc in nyc. And to answer Catherine C-S, these instructions were written by an instructor, as a training module for Office 2010. There are inconsistencies within this large, 50-file project, hence the confusion on everyone's part. I am tending to Task Pane, but the answerer has indicated low confidence. Thank you all for your patience.
The term "liste à étage" does not appear on the Web apart from this Proz webpage. And unfortunately it's not clear what was intended – the list of styles in the gallery? or the styles preview? or styles sets? something else? IMO the context does not indicate what is being referred to... at least not yet, anyway... though we suspect it is not a "drop-down list/menu" since the term "liste déroulante" also appears in the French text.
Can you possibly provide some clarification by giving us some more of the context?

Staged lists are not specific to Word 2010 (which I don't have on my PC). They have been around at least since Office 2000. And they are not specific to MS products.
'staged' refers to the fact that when you open a drop-down menu, the options you use most often appear at once; but if you wait a moment (or click at the bottom of the list) it opens out fully to show all the options (with the most-used and less-used ones having different background colours).
This quote from the "fuller context posted at 15:21 today:
