French term or phrase: Déstockage
This is in a product description of an pharmacy inventory control system. What does déstockage refer to here exactly? I've looked at the related KUDOS answers, but I don't think they fit the context here.

Stock level correction

Explanation:
Sounds like it's possibly talking about the process of resetting stock levels by various methods, possibly following stock damage?

disagree  rkillings: GDT is wrong. No evidence that 'Action de prélever des biens d'un stock au fur et à mesure des besoins' is called "destocking" in English. This word still means running down the overall quantity of stock.

Remove from inventory

Explanation:
The term may be being used in a simpler way here, namely, removing the items from computer list of inventory for return to supplier for refund/credit and/or destruction due to products being past use-by dates.

I would suggest that a verb and not a noun be used in English.

  -> Fair enough

agree  rkillings: French term DOES refer to decrementing the stock count as units go out the door, and contra the GDT this is not a received meaning of "destocking" in English. Pick the item, scan the barcode (or key in the SKU manually), and the system adjusts the count.

stock depletion

Explanation:
Another possibility. Or perhaps even stock depletion tracking.

I also found the following "Note" on the GDT entry for déstockage interesting:

Note(s) :
