The flow of receipts makes me think of (work-)flow and routing.

Software which has to handle digitised receipts would need to route them (to the relevant person/software function) and archive them (i.e. keep a copy for future reference).

Yes, I think flow would work fine. Basically routing is the action which makes the flow happen...

Asker: Actually, why not "flows," as you say? It does fit quite well with the illustration...(and they do use "workflow" in EN, so I would not consider this). It keeps the vagueness of the original, if you ask me...

I would not say digitizing receipts. The incoming receipts need to be audited...
