I've also found it left in French quite a few times

Braised oxtail with wild mushroom mousse, chive and garlic pomme purée and sauce lie de vin.

La fourchette restaurant in Brighton does it, give them a call if you want the details! (and a great place if you're dropping by...)

ça semble être des lies (lees) (peut-être de lie vin et/ou lie de cidre), il ya deux hôtels/restaurants sur internet qui mettent cette recette à leur carte. Les contacter ?

agree Carol Gullidge: puisque tu as ton CAP....MAIS Qu'est-ce que c'est le CAP? "wine sediment" (Collins), this seems unlikely! Your idea of contacting the hotels might be a good one
