Cervin: Crudités or even keep the à cru. You certainly wouldnt want to eat the bottom of the stalk but the tips of small tender plants would look pretty and would be edibly acceptable if you see what I mean!

I would have thought they meant '(asperges) poêlées à cru', in other words pan-fried without being precooked. In which case I'd suggest raw fried?

You're right, of course, but raw asparagus seems so unplausible somehow (the mere thought of it gives me indigestion :) !) so I thought the chef could have been demonstrating a little artistic licence!
