neutral Tony M: Yes, Sue, but that would usually translate 'copeaux', a quite distinct term / Can be, but I don't think they're ONLY that? Do you think 'trimmings' might be better then? I have 'brisures' in my pantry, which are 'broken pieces'

  -> Hi Tony ... aren't the parings the skin that you take off the outside of the truffle? http://www.chow.com/digest/1908 interestingly, can't find website which uses copeaux AND éclats so could be same thing ..trimmings is better option than parings tho' :-)

Chaud-froid of Scallops with grated truffle

Explanation:
If it is a chaud-froid then the truffle is probably in the sauce, so shavings might not be appropriate.
This is one of those cases where you cannot know without asking.
"Grated" is not as "gastronomic" as "shavings", but does cover all possibilities, and would serve as a "translation pending further information".

truffle parings

Explanation:
A good old standard term!

Note that the 'éclats' really just means '(noticeable) bits', but hard to find a nice word to express that! I'm not sure if 'grated' really works, as that suggests very small bits that wouldn't be noticeable (by their size, at any rate!)

neutral Tony M: I think that's someone being perversely literal, and in any case, those refs. seem mainly to be referring to it as the name of a dish, not the actual bits.

  -> we're not talking about one person, nor necessarily about translations - which I somehow doubt. There are plenty of other examples of the same thing. My 1st thought was "truffle bursts", which I prefer, but there were 0 hits for that!

  -> I think some of the links are perfectly valid for this context, which, after all, appears on a menu, as do some of the examples. But, admittedly, not all are items on a menu. It depends on how imaginative the menu has to be..

neutral Scott Alexander: The standard culinary term for this in English is "truffle shavings." The term "t.e." gets more google hits than "t.s." but they are not in the sense of the source text.

Parings doesn't sound too appetising to me and 'shavings' is often used to denote delicate but visible 'bits'.

Here is a chef talking (+ mention of 'pairing' [sic!] for Tony
