|This appears in the Fish section of a menu for a gourmet/nouvelle cuisine style restaurant. Has anyone any idea what the chef can mean, please? Scallops fried with veal brawn sounds very unlikely to me ..?!|

I'm lacking a certain amount of originality this morning, but I'd translate this dish as it is. It isn't brawn, but the actual meat of the head - most probably served hot in this instance.
The veal's head is probably sliced or in small pieces - it may be worth checking back with the client. Finely sliced head of veal, or something similar somehow sounds a little more appetising ;-)
