French term or phrase: tempura aux sashimis
Hi,

Having no idea about Japanese cuisine, I ask the following question

"Ici le maître-mot est sans conteste le raffinement. Raffinement culinaire tout d’abord, puisque, de l’assortiment de sushis ou de tempura aux sashimis en passant par le poisson ou la viande du jour, l’explosion de saveurs en bouche a toujours lieu. "

My translation:
...refinement definitely prevails. First of all, refinement in the cuisine, as with the assortment of sushis or tempura to sashimis ranging from fish to the meat of the day, the burst of flavors on the palate is always present.

Is it: "sushis or tempura with sashimis...?
or "sushis or tempura to sashimis..." ?

I mean I checked what tempura where and also sashimis, but I don't think they go together, so it's probably my second suggestions thats right...please help!

Explanation:
Whereas it is quite possible that hot tempura are served next to cold sashimi, the fact that "en passant par" comes after this leads me to believe that your second interpretation is correct.

Something along these lines...
Firstly, a refined cuisine, which ranges from an assortment of sushi or tempura right through to sashimi, whilst not forgetting the daily fish or meat special.

Whereas it is quite possible that hot tempura are served next to cold sashimi, the fact that "en passant par" comes after this leads me to believe that your second interpretation is correct.

tempura with/and sashimi


Explanation:
You could use either "with" or "and" here; it's basically a mixed plate of sushi or tempura plus sashimi. By the way, no "s" at the end of any of these terms!

Given Tony's parsing suggestion, I would instead propose:
First, a refined cuisine, in which all dishes - be they sushi or tempura platters, sashimi or the fish or meat of the day - explode with flavor at every bite.
(Or something like that.)

Explanation:
this sounds better and is more precise as the author lists sushi as an assortment and the others as a range/spectrum. Also, I don't believe sushi should be pluralized as it is already identified as an assortment. Sushi is a method not a dish, as are the other items, but within the context of "a range of" these (tempura, sashimi) point at different varieties of each, and can, albeit awkwardly, pluralized in laymen's tongue. However, they should normally not be pluralized, methinks.

disagree  Tony M: The FR structure does not lend itself readily to this interpretation, and note that many words that are naturally plural in the original foreign language do properly take a plural -s in FR, e.g. spaghettis
