French term or phrase:tempura aux sashimis
Hi,
Having no idea about Japanese cuisine, I ask the following question
"Ici le maître-mot est sans conteste le raffinement. Raffinement culinaire tout d’abord, puisque, de l’assortiment de sushis ou de tempura aux sashimis en passant par le poisson ou la viande du jour, l’explosion de saveurs en bouche a toujours lieu. "
My translation:
...refinement definitely prevails. First of all, refinement in the cuisine, as with the assortment of sushis or tempura to sashimis ranging from fish to the meat of the day, the burst of flavors on the palate is always present.
Is it: "sushis or tempura with sashimis...?
or "sushis or tempura to sashimis..." ?
I mean I checked what tempura where and also sashimis, but I don't think they go together, so it's probably my second suggestions thats right...please help!
Explanation: Whereas it is quite possible that hot tempura are served next to cold sashimi, the fact that "en passant par" comes after this leads me to believe that your second interpretation is correct.

I would definitely recommend getting this checked by a native English speaker, particularly the bit about the burst of flavours on the palate always being present.
