To me, a bed suggests soemthing loose on the plate, spread out, like a 'bed of lettuce'; whereas I imagine this as a sort of cushion-shaped thingy, I'm thinking along the lines of something like a Weetabix, or perhaps more likely Shredded Wheat! 'Potato and salmon pattie', perhaps; the difficulty is, it might be an open texture using something like grated potato, as in 'rösti' etc., or our local speciality here, 'farcidure'.
Would probably be best to get details from the chef of exactly what it looks like and how it is made. |
