French term or phrase: longuet
This is some kind of long cake pan - a Flexipan mould. Is there are word in English for "longuet" -I'm pretty sure it isn't "bread stick" in this case:

Dans un moule flexipan **longuet** et à l’aide d’une poche pâtissière, dresser 140 g de pâte à XX par **longuet**.

Explanation:
French being much more specific than English about patisserie and baking matters, I would stick (!) with the French term if you can.

Le Vocabulaire du Pain defines the longuet thus:

'petit pain biscotté mince et long (gressin)'

In English the only words we use for this type of thing is the Italian grissini (always in its plural form) or breadstick. As the typical 'longuet' is rather different, I would be inclined to keep the word, and perhaps put breadstick in brackets.

agree  Tony M: As long as you keep the FR word and add an explanation, I think this works OK; bread sticks do come in all sorts of sizes, as apparently longuets do too.

Explanation:
IMO a breadstick is pencil-size whereas longuet are fatter, more the width of a thin éclair.
So rather than translating longuet directly as there seems to be no direct English equivalent I would explain it in a different way, as suggested in my answer.

neutral  Tony M: I think I'd tend to avoid 'strip', as to me it suggests something long, but flat... / Your ref. shows a 'stick' of chicken (certainly not a strip or 'lanière'); when you pipe something, it comes out as a sort of 'sausage'.
