I'm currently translating a list of main courses for a restaurant, with no other context available.

One of the dishes is:

Bourgeois de petit bâteau cuit à plat, coquillages liés, sucs verts tendres

"de petit bateau" means that the fish is caught by small boat -> "de petite pêche" -> fresh caught or freshly caught or fresh caught by small local boats (too long I think for a menu).
