Not sure what exactly you're dealing with, Steph., but your tiroir enfichable sounds a lot like the tiroir débrochable I've encountered for power station equipment.

From my notes:
Débrochable (mal utilisé) = déconnectable = deconnectable (tool required)
(correctly used)= pin-insert type, draw-out type (no tool required)
"Débrochable" = draw-out: said of trucks/drawers in which switchgear is mounted
"Déconnectable", "amovible" = plug-in: said of the switchgear itself.

AFAIAC, your baies have to be racks.

Explanation:
Your hunch is right and this is why:
this other possibility is that a "baie" in a worshop is just one of the different spaces set one next to the other, exactly as used by this official website indicated below. Since the use of baie in that meaning is very old, probably dating from the beginning of the industrial era, no wonder that an English site uses exactly the word for word translation "bay" "with a 5 bay workshop".
And such a baie/bay can be outfitted with a ventilation device
