Food & Dairy / Cheese
French term or phrase: morge or morgée
Apart from a referene to a type of cheese called "Mylord" I can find nothing anywhere to describe what this means. I would be hugely grateful for any suggestions! Here it is in context ... "croûte fine avec morge de couleur pâte blanche, avec quelques ouvertures biologiques
croûte lisse jaune orangée, légèrement morgée, sans moisissures"
thanks

English translation:smear ripened
Explanation:
sounds disgusting - only for scientific use. I would put 'morge' (even this sounds a bit deathly) and give a short explanation in brackets or some similar trick of the tail...

Also, if you look at the big, dodgy Grand Dictionnaire under smear, it sends you to Peau de Crapaud (but gives a good explanation) .... bon appetit

washed-rind cheese

Explanation:
Another idea could be:
Washed-rind cheeses are periodically bathed in a saltwater brine as they age, making their surfaces amenable to a class of bacteria (the reddish-orange "smear bacteria").

Saumure : Solution à base d’eau et de sel avec laquelle on frotte les fromages ou dans laquelle on plonge les fromages à pâte dure ou demi-dure afin de durcir la croûte et ainsi de mieux les conserver. On dit aussi morge.

Example sentence(s):
  • What really sets washed-rind cheeses apart, however, is how they are ripened. During the curing stage, they are washed regularly in a mild brine solution containing a substance known as red smear. Often, at the beginning of the ripening process, colouring

morge, morge-wiped

Explanation:
Morge - Brine enriched with scrapings from old cheeses, used to rub the surfaces of some cheeses during affinage
[Dorling Kindersley "French Cheeses"]

The cheese is pressed, brine-soaked and aged, during which time it is rubbed with salt and wiped with a cloth soaked in a morge (made by mixing the sticky, brown rinds of old cheese with saltwater.).

So it's not something that occurs naturally. However I'm not sure if the "morge" on a cheese is this mixture or a surface coating induced by the treatment (through biological action).
