The rib eye includes the eye muscle (longissimus dorsi), the spinalis dorsi lying adjacent to and on the backbone side, and the complexus lying adjacent to and directly below the eye muscle of a primal rib. All other muscles and all bones, backstrap, the blade bone and related cartilage, and the exterior fat covering, shall be removed and excluded.
