The cheese rind forms and then is peeled away and allowed to form again?

La croûte va peu à peu se former, grâce au développement d’une fleur blanche qui est « rabattue » régulièrement.

Explanation:
I get the impression it's probably not 'peeled away', so much as smoothed down; you know when mouldy cheese goes all 'furry', but you can press or rub it and it stops being furry. presumably, if you did this several times in succession, it would end up going harder...

Explanation:
