chilled prepared salads


Explanation:
As with chilled dairy products ('produits laitiers frais'), they're talking about products sold from vendors' refrigerated cases -- the commercial meaning of 'frais'. And the dressing could well be with it, in a separate container.

You wouldn't want the patient thinking it would become safe after the freshness date is past.
