In Pascale's reference, it appears in brackets (implying that it's a synonym) after "sépion", which means cuttlebone.

Ce n'est pas "la piste" mais le piste. C'est un petit calmar qui ne grandit pas (avec des gros yeux par rapport au corps). Il a une grande valeur marchande.

I don't think it's anything to do with trails or tracks. Mark, where did you get the information that it's a type of small squid? Does it give the Latin name?

If you look at the picture, it's a bed or field of diced squid, "piste" in the sense of a trail or track. I'd call up the restaurant to find out what's what!

I just found it too - my other searches had not managed to separate it from the more usual meaning of "piste". It is a type of small squid specific to Provence...

It looks like a little shellfish or crustacean of some kind (the recipe here calls for "pistes" or "petits encornets" = small squid
There is also a reference for "la piste de supion". HTH
