French term or phrase: Une discipline d'airan
La technique ? Une discipline d’airain qu’il faut savoir parfaitement maîtriser pour pouvoir la contenir dans ses limites ancillaires lorsque vient le moment de créer.

This is a description/review about a chef. I have looked far and low to find out what the term means discipline d'airan. I have only found it to be a place in Nomandy yet that is clearly not its meaning here as it it is not capitalized? Any thoughts?
