Just found a bunch of websites which have *carnes chicas* of various kinds listed (trachea, cow's stomach, etc.). This is called *offall* in English (See James Joyce's Ulysses for an eater of offal...)

Actually, I think everyone was right. This term seems to have several possible interpretations. A slaughterhouse
in Uruguay told me "trimmings." Several knowledgeable Uruguayans translate it as "offal," and
several others told me it refers to the meat from young animals, which in this case would be
veal.
So I ended up telling the client it was probably "trimmings," but controversial.

You are right. I checked this article on Argentinian meat and I found the following: Los supermercados, como promedio de las principales cadenas, también marcan la carne con un 40-50% de margen, mientras que en el caso de carnes "chicas"(TERNERA) los márgenes de remarcación suele exceder el 60%.

I suspect that the *carne chica* in the foregoing refers to **cuts** of ternera. Here is an entry for mutton (carne ovina): El trasero luego va al proceso comercial del desosado obteniéndose pierna, cuadril, bife, lomo, carne chica, (la suma total de la cantidad de carne del trasero), hueso y grasa (suma de la subcutánea e intermuscular).
