Yes, it has to do with "masculinity", but not solely, if at all, with reproductive suitability (though generally they go hand in hand, as they say in the horse's mouth).
It seems to be more to do with masculine appearance. Just think of some of those muscular hunks of film stars and male models who are in fact as queer as nine-bob notes; they are fait en père maybe, but the mere notion of reproducing by natural means would make them sick.

The "built to perform" looks good, though I don't think they are (necessarily) talking about reproductive performance (besides, it's all done artificially these days).

Asker: This is very helpful. In many, if not all, of these references the sire of the horse (le père) is very well-known. This stallion also has a very well known father and I'm wondering if this might mean something along the lines of 'like his sire' or 'in the mould of his father'?
The Syndicat Linaro link to Quettino is a text from the same author and I know the pony well - he's very beautiful but I wouldn't really consider him to be 'butch' or particularly masculine. However, he DOES take very much after his father, one of the top pony show jumpers of all time.
