I have "killing out percentage" for "rendement en viande, but I don't know what to to with "noble"

The idea is to get an accurate idea of the yield of the better (traditionally known as 'choice') cuts of meat, in order to better estimate the total value of the carcass, for example.

neutral  rkillings: Avoid "choice". USDA has already appropriated Prime/Choice/Select (+ Cutter/Canner/…) as grades of quality (marbling, etc.). The *carcass* is graded, not the cut. Find a different adjective.

There are the better cuts, and then there are the less popular, not so good cuts. Nobility is out of fashion these days, on the farm as elsewhere.
