Nos techniciens sont sélectionnés en interne sur la base d’un des deux pré-requis suivants :
Connaissance du process : réglage machine, réglages des paramètres qualitatifs et énergétiques,…
Connaissance diagnostic afin d’établir un état machine.
Nos techniciens sélectionnés suivent un parcours de formation complet constitué par la réalisation d’**audits en double**.

Is this "double audits" (the term exists) ? Or something else?

I believe this refers more to the training than to auditing specifically. Two people perform the same audit, trainer and trainee, and the results are compared. Also happens when the competency of the auditor is challenged.

Explanation:
I found only one apparently relevant hit, which comes from the butchery industry and relates to bovine health audits by a certification body called SGS ICS.

The table on p. 31 of the PDF is a list of problems which may be identified during audits, one of which is "Inadéquation entre contrôles internes et externes". The solution in the right-hand column is "audit en double avec les techniciens". I think this implies that the audit is carried out jointly by internal and external staff.
