I contacted someone in the production department and it turns out "tour" here means "sub-batch". Consequently, one should alter the glossary entry.

Explanation: Tour could be the set-up (manip in French) which is why I asked you for more data.
It could also be shift as you mentioned.
A "tower" can be used to manufacture some drugs... or for distillation... In that case it would be bench 1 or 2...
