French term or phrase: déverseur de la vésicule biliaire
"Ils peuvent bloquer aussi la fermeture du canal cholédoque et du sphincter d’Oddi, déverseur de la vésicule biliaire, ce qui ralentit encore la digestion dans l’intestin"

This is referring to what an irritated bowel can do to slow down the speed of digestion. I'm not sure what "déverseur de la vésicule biliaire" means here, in relation to the sphincter of Oddi.

The liver provides a chemical called bile to the digestive process, and the pancreas provides pancreatic juice. These important chemicals flow from the liver and pancreas into the small intestine to help with digestion. The flow of these chemicals is controlled by muscle called the sphincter of Oddi.

A sphincter is a muscle (usually round) that can open and close. When it’s working properly, the sphincter of Oddi opens to allow bile and pancreatic juice to flow through and then closes again.

Explanation:
Oddi's sphincter actually controls the flow of bile from the ampulla of Vater into the duodenum, ie it is at the intestinal end of the bile duct, not the gallbladder end.

This is an alternative to the very long-winded original text which sounds very odd in English.

"They can also obstruct the biliary tree".

The gall bladder leads to the common bile duct which then leads to the sphincter of Oddi where it joins with the duodenum. All this is called the biliary tree or biliary tract.

If you want a very literal translation, then i'd go with SJLD's translation.
