rustic wheat Explanation: I found several sites under rustic wheat. Just type " rustic wheat " in any search engine. SEE FOR EXAMPLE : FORMULAS AND BAKING TIPS • Rustic Wheat Bread Prepare natural starter by combining 2 lbs. water with barley malt. Mix in 1 lb., 4 ozs. each of white wheat flour and whole wheat flour to form moist dough. Cover; let rise at room temperature for 24 to 36 hours. Starter |

natural wheat Explanation: in the sense of untreated, unbleached, hence more "rustic" I did a quick check on Internet on the sites that sell spelt and natural wheat is how they would describe. Also there is a cereal that I like with spelt in it which is called "ancient grains". Regards, Paola L M see below Mosher - All natural Wheat and Grain Products. Grains Available: Wheat, Amaranth, Triticale, Soybeans, Spelt, White Wheat, Peas, Blue Corn, Dehulled Millet, Flax, Hulless Oats, Hulless Oats Flakes, Corn and Beans. You can pop it for a crunchy snack or as a salad topping, or even make it sprout to use in salads. Buckwheat Explanation: I am not sure about this but I have heard about it in vegetarian circles. The French translation is "blé sarrasin" or "blé noir". |

hardy wheat Explanation: Definitely. "Spelt is a type of hardy wheat," as indeed it is. (Incidentally, the opposite is "non-hardy wheat.") See also the web site below. -- Hope this helps! -- HC Reference: http://www.bethany-wpc.org/profiles |
