i would go with the 'other' because i think in this case it really makes sense, but would avoid 'he/she' issue by using as it is embodied or something along those lines in any case.

Explanation:
I think that you'll have to get a bit creative in turning this one around. I would avoid "the Other" and also look for something which avoids having to use s/he.

Perhaps something like:
...XXX, who in his/her work constantly seeks out difference and highlights diversity.
