French term or phrase: naviguer aux instruments
On a un gâchis énorme (5% de truies après la mise bas sont perdues), on gère tout cela à l’œil, pour prendre une analogie  on navigue à vu dans les élevages au lieu de naviguer aux instruments.
We have a tremendous waste (5% of sows after farrowing are lost), we manage all that under eye, for considering an analogy  we sail at sight (as far as the eye can see) in herds instead of ........? Is this expression?

instead of using instruments
Explanation:
To use a seafaring analogy: when it comes to raising pigs/pig farming, we navigate by sight instead of using instruments.

if you want to retain the imagery

agree  rkillings: Keep the metaphor, but prefer 'navigate by eye' ("Navigating By Eye When navigating in areas with uncharted coral reefs it is a good idea to wait until the sun is high and behind you …" BoatSafe.com)
