Another one from the same section of the academic article on marketing theory:

Les trois facteurs manipulés [Mentions RVP ; Familiarité et Quantité], le sont donc chacun à deux niveaux (***limitées vs. nombreuses ***ou nulle/faible vs. élevée).

I've translated ***limitées vs nombreuses*** as "small vs. large numbers", seeing as just after there's " zero/low vs. high" and would appreciate confirmation!

Explanation:
I agree with your own proposal.

That said, you need terms that can work with 'Mentions RVP, Familiarité and Quantité'. 'numbers' works OK for the 1st and 3rd factors, but not so well with the 2nd (familiarité). But the same problem also applies in French, so ... does the English need to be better than the French?
