I'd say 'slippery' -- at least, that's the way I commonly hear it used in everyday, spoken FR --- people say hold this for me / undo this jar for me, 'cos I've got 'les mains grasses'

And it would make sense: he is afraid to turn because he might skid, not because he has excessive grip...

I'd say 'slippery' -- at least, that's the way I commonly hear it used in everyday, spoken FR --- people say hold this for me / undo this jar for me, 'cos I've got 'les mains grasses'
