hold/grip
Explanation:
I think this is merely another way of describing how the ski grips on the ice, so accroche would be fine for grip and hold for ancrage.

agree  MoiraB: or edge hold/grip, but for me edge hold and edge grip are synonymous. BTW what are you doing skiing on ice, Claire?? ;-)

-> Yes, I think they're synonymous too - presumably hence the /. And I'd much rather not ski on ice, but when you do, you're certainly glad of good edge grip and/or hold! Give me nice groomed snow any day!

agree  Cervin: Hold/grip seem fine here. They are certainly trying very hard to sell these skis! I just like a pair that does as they are told!

Explanation:
je pense que le mot 'anchorage' ou 'anchoring' marche pour 'anchrage' et ta solution por 'accroche' (grip) semble bien

Note: An important point to consider also is the concept of 'traction'. Click on link:
http://www.rei.com/learn/Snowsports/rei/learn/snow/glnordicf
"Grip wax produces this traction by allowing the rough edges of snow crystals to penetrate the wax layer just enough to grab hold of the ski when it is stationary and weighted. It does not keep the ski from gliding smoothly when already in motion. "

neutral  MoiraB: grip OK but anchoring has nothing to do with skis. Your examples aren't relevant to skis either.

-> Actually, I went over & beyond what asker wanted by giving an additional definition to another term NOT in the heading for anchrage, so technically you needn't comment on that one, only on accrocher(grip). Kudoz rules allow only one term per question.
