In the light of that important extra context, I think you need something like this to cover all eventualities.

I don't know if any more elegant term exists, but as a former sound installation engineer myself, if I came across this, I'd know exactly the sort of thing they meant.

Thanks, Tony. And a special thank you to Marc. Sorry about the lack of extra context for "restaurants". I only noticed later in the text a reference to music being played in restaurants for birthdays (a bit strange... I never heard of this) but thought it best to incorporate this into the description of "sonorisation commerciale". I will also add "in-store sound systems" to the glossary as this is probably the most common definition. Thank you all for your input.

Note that according to the Crown Audio reference, if you want to use the word "retail" you could call the system a "retail STORE" sound system" or a "commercial sound system for a retail STORE". This avoids the retail/wholesale confusion. But you can simply call it a "commercial sound system" for whatever type of business you like (in your case a shopping centre or shopping mall it seems.
