French term or phrase: bars ambiances
From an article on a fruit preparation for preparing cocktails:

Des mélanges de fruits pré-conçus qui permettent de compléter vos cocktails au dernier moment . Des préparations prêt-à l'emploi, idéales pour les bars ambiances et qui vous permettent de gagner en rapidité et en productivité, tout en gardant d'exceptionnelles qualités gustatives

Is this just 'bars' in English, i.e. do we even have a word for it at all?

Not necessarily themed, simply more "intimate", more "exclusive" than your bog-standard Café de la Gare or Le Bar des Amis. And pricier too.

Explanation:
Not a common term, but it can be found on travel/tourism/property websites. I thought of 'theme bars' at first, but this context is less specific and simply refers to the fact that the bar in question has an 'atmosphere'.

agree  Clarissa Hull: This term seems to fit best the context given by the asker, i.e. cocktails for private lounge parties, unless the text was for professional cocktail makers... Then all 3 would fit!
