Explanation:
As what is being unloaded is horses and they need a person in charge as things can go wrong and horses can behave unpredictably. So the person in charge has to have adequate skills for handling horses and team leadership skills to coordinate and control the work of the other people involved.

Explanation:
'Conducteur' here can't be 'driver', so I've used another meaning for this context.
An unloading operator seems to be someone who knows exactly what they are doing when it comes to the unloading of vehicules.

In this 'horsey' context, I suppose that the person dealing with the unloading could also be called an 'unloading attendant'.

Explanation:
From what I can see, a driver who transports horses is also usually a handler. (S)he takes responsibility for transport and care of the horses during the journey including loading and unloading.
