Aus einem Videokochkurs für Chefköche:

On reprend la crème glacée à la noix de coco, avec "une maturation" de 24h, on obtient une texture très onctueuse, très crémeuse.

Par habitude, je mixe le sorbet quand je viens de le réaliser et après "maturation" avant turbiner.

Es wurde mir gesagt, dass es sich vielleicht um eine Zeit handeln könnte, in der sich Aromen und Eiskristalle verbinden...

Wenn es kein Eis wäre könnte man wohl auch "ziehen" sagen.

Maturation heißt ja eigentlich Reifung/Reifezeit, aber das würde ich nur für Käse, Wurst und Schinken nehmen, nicht für so eine "kurzfristige" Angelegenheit.

Explanation:
... nach einer Rastzeit von 24 Stunden ...

"rasten" oder "ruhen lassen", wobei "rasten" mehr für eine Teigmasse verwendet wird. Als Substantiv erscheint mir aber "Rastzeit" passender als "Ruhezeit" bzw. "Ruhezeit" sogar falsch

agree  Wolfgang Gösweiner: Mag sein. Aber das bedeutet noch lange nicht, dass es sprachlich korrekt ist. Trotzdem: Ich will mich da nicht zu weit hinauslehnen. Mir persönlich ist für solche Fälle jedenfalls der Begriff "Rastzeit" geläufig. Der ist in jedem Fall auch richtig.

  -> "Rastzeit" klingt in deutschen Ohren etwas seltsam, scheint mir eher in Österreich und der Schweiz geläufig zu sein.
