French term or phrase: drageline

Comment qualifier la table de XXX ?
Raffinée, évidemment, subtile, aussi, inventive, sans aucun doute… Mais la différence, la vraie, c’est sans doute ce petit brin de folie, cette audace qui réveille vos papilles.
XXX s’amuse.
Et tel un peintre au sommet de son art, la maîtrise est parfaite.
Son audacieuse ******drageline****** de foie gras chaud en témoigne :
des escalopes de foie gras pannées avec des dragées concassées, servies sur une tombée d’échalotes, avec un jus de betterave rouge… et les desserts aussi, comme cet ananas cuit dans du miel avec des fruits de la passion, curry, gingembre, vanille et anis étoilé servi tiède dans un caquelon, avec une boule de vanille et des graines de sésame !
On n’a jamais vu ça…

Explanation:
(von der Gänsestopfleber), vermute ich. "Bonbon" hört sich nicht gut an.

*drageline* (offenbar von: dragée) finde ich häufig in Verbindung mit kurz angebratener Gänsestopfleber, ist aber in keinem Wörterbuch verzeichnet. Ist auch der Eigenname einer frz. Konfiseriekette.

Hier offenbar mit zerstoßenen Dragées paniert - scheint mir etwas abartig zu sein. Schade um die Gänseleber...
