ébullition Not for grading Explanation: Schreibfehler! Comment bien choisir les truffes en conserve : Préférer les truffes entières, pour lesquelles la fraude est plus difficile. Bien lire l'étiquette mentionnant le nom de l'espèce : magnatum (truffe blanche du Piémont, la plus chère), melanosporum (truffe noire du Périgord), uncinatum (truffe de Bourgogne) sont de bonne qualité. Aestivum, indicum (truffe de Chine), borchii, brumale sont de qualité moindre.
