Après la phase d'affinage suivent la mise sous étain et la maturation qui correspondent à la ***mise en sommeil*** des arômes et du produit.

Zur Information: Der Käse wird in Zinnfolie eingewickelt und in Kühlkammern gelagert. Die Aktion der Mikroorganismen wird dadurch gestoppt. So weit klingt alles nach Ruhephase. Aber genau in dieser Zeit entwickelt sich der typische Roquefortgeschmack.
